Spring time is made for turkey hunting and picking morels! These delicate mushrooms can be extremely hard to find and require a little crawling around on the ground to spot them but they’re absolutely worth it! We recently found a good amount, and decided to make homemade pizza topped with our fresh morels.
INGREDIENTS
8-10 medium sized morel mushrooms
1 lb wild hog sausage (or whatever meat you prefer )
¼ cup Alfredo sauce
¼ cup feta cheese
¼ cup mozzarella cheese
Handful of baby spinach
Pre-made thin crust pizza crust
¼ tsp butter
DIRECTIONS
Preheat oven to 425 degrees, place pizza crust directly on rack while preparing other ingredients.Brown sausage in a skillet, wash mushrooms in cold water, slice in half and rinse again.
In a separate skillet, brown mushrooms in butter, drain off excess liquid and set aside. Your pizza crust should be semi crispy but still mostly soft, place on a pizza stone, spread 1/4 cup Alfredo sauce on crust.
Layer sausage on top of the Alfredo sauce and add 1/4 of the mushrooms, add the mozzarella and feta. Add the baby spinach and the remainder of your m
ushrooms. Cook for roughy 15-20 minutes or until the edges are brown and the cheese is melted.
