Recipe: Spinach-Feta-Cranberry Stuffed Wild Turkey Breast

Turkey season is almost here and this is the perfect recipe to celebrate! If you have any turkey left from last season (first, how could you!?!) make this for a great pre-season meal, or save the recipe for when you harvest your spring bird this year!


Ingredients

  • 1-2 lbs. turkey breast

  • 1/2 cup dried cranberries

  • 4-6 oz Feta cheese

  • 1 cup fresh baby spinach

  • 1/4 - 1/2 cup real bacon crumbles

  • Garlic powder with salt, as desired

  • Weber’s Jalapeno Garlic seasoning, as desired

  • Fresh lemon, optional

  • Honey


Directions

Butterfly the turkey breast. Lay the breast out flat and use your fist or a meat tenderizer to pound the meat out flatter (but not too flat, as you do not want it to tear).


Season the turkey breast generously on both sides with Weber Jalapeno Garlic seasoning. Add extra garlic powder, if preferred.


On your flattened piece of turkey sprinkle the feta, cranberries, bacon crumbles, and spinach out evenly. Optional: Squeeze half a lemon over the turkey and filling.


Roll the turkey up and secure it with kitchen twine in 2-3 places. If you don't have twine, use toothpicks to hold it together.


Melt butter in a skillet and sear the turkey roll on all sides until it is colored nicely. Add a couple of teaspoons of butter for extra flavor!


Preheat oven to 375 degrees.


Put a little olive oil in a pan, add the seared turkey roll and bake for 25 minutes or until the turkey is at 160F with a meat thermometer. At about 10-15 minutes, drizzle honey over the top of the turkey roll and continue baking.


Remove from oven and pour juices from the pan over turkey roll. Slice and serve with your favorite sides.
